Yamamotoya’s speciality dish is “Miso Nikomi Udon” which is known as popular local food in Nagoya, served in a hot pot with miso soup and soft yet chewy handmade udon.

Nagoya is popular with its miso! In the restaurant, they are using using hatcho miso which takes three years to make it, a darker, more reddish brown in color than common miso and has a rich flavor.

After a lot of requests from Muslim customers, Yamamotoya formulated other Nagoya’s soul food, the halal tebasaki ! They are using the halal meat and change the mirin, which is usually used in making tebasaki, to dates syrup which has richer sweetness and flavor.
