JoGeSaYu: A Global Vegan Dining Experience Now Open in Hiroshima

On May 11, 2025, a groundbreaking vegan restaurant called JoGeSaYu (上下左右) opened just a 5-minute walk from Hiroshima’s iconic Peace Memorial Park. It’s the city’s first full-fledged vegan restaurant and already turning heads—not just for its inclusive philosophy but for its world-class culinary team.

JoGeSaYu was founded on a powerful concept:

JoGeSaYu is a collaboration of culinary giants:

• Chef Katsumi Kusumoto of “Saido,” Tokyo’s internationally acclaimed vegan restaurant, curates the main menu. His vision? Familiar, comforting Japanese dishes—ramen, curry, katsudon—reimagined without animal products, yet packed with complexity and flavor.

• Patissier Hironobu Tsujiguchi, the name behind world-renowned patisserie Mont St. Clair, supervises the dessert lineup. His egg- and dairy-free creations prove that vegan sweets can be just as elegant, rich, and satisfying.

• On the ground, Chef Shinji Ikematsu leads the kitchen, focusing on welcoming the restaurant’s international visitors with warmth and precision.

JoGeSaYu goes beyond being “just vegan.” Every dish meets the following criteria:

✅ 100% Vegan (no animal ingredients)
✅ No Five Pungent Spices (no garlic, onion, leek, scallion, or shallot—accommodating Buddhist vegetarianism and Taiwan Su-Shi)
✅ No Alcohol-Based Seasonings (friendly for halal diets)
