Kourakuen’s Vegan Gyoza

Euglena Co., Ltd., a company with the concept of “Sustainability First”, and Kourakuen Holdings Corporation, a company that manages chain store ramen shop “Kourakuen”, are collaborating with Chef Toba from the 1-star Michelin restaurant “SIO” to launches vegan gyoza on January 18th, 2023.

Kourakuen has been conscious about vegan from the beginning and has been selling vegetable gyoza that does not use meat since 2019. However, some ingredients are animal-derived which makes the gyoza do not recognize as vegan.

Therefore, under the supervision of Chef Shusaku Toba, we have found a balance of ingredients and taste that bring out the flavor of dumplings without using animal-based ingredients. The Euglena Company’s “Ishigakijima Euglena” is used to create nutritious and completely vegan gyoza, uses only vegetable ingredients, and does not use any animal-based ingredients.

The ingredients are Ishigakijima Euglena, which contains 59 kinds of rich nutrients, and 7 kinds of vegetables (cabbage, shiitake mushrooms, onions, green onions, bamboo shoots, Chinese chives, and perilla leaves), with soybean-derived protein as the main. The green dough is kneaded with spinach powder, and the temperature and time of kneading the dough are adjusted according to the season so that we are able to create gyoza with a chewy and crispy texture. Feel free to enjoy vegan gyoza that is good for your body and mind.
