A Collaboration That Brings The New Breeze to Japanese Foods!
Saido Restaurant (Jiyugaoka, Tokyo) collaborates with Japan’s largest (and long-established since 1922!) sauce company, Otafuku Sauce Co., Ltd, and produces two important seasonings in Japanese cuisine, “Yakisoba Sauce” and “Umami Dashi Tsuyu” (soup base) in February 2022.
Both products are animal-derived ingredients-free, alcohol-free, and five pungent roots-free so that they can meet various dietary.
*Five pungent roots (gokun) = onions, garlic, scallions, chives, and leeks.
When it comes to “free from…” or “not use…”, many people may be doubting if it is really delicious. In that case, you don’t have anything to worry about since these products are developed by the professional team of Otafuku Sauce company who has conducted research to realize a surprising authentic taste and flavor.
Besides making yakisoba, the yakisoba sauce also can be used to make a demiglace sauce and Neapolitan sauce, even adding to curry roux as a hidden taste to increase the depth of the flavor.
The Umami Dashi Tsuyu is versatile enough to be used not only for simmered dishes, miso soup, and mentsuyu (noodle soup base) but also for stir-fried dishes. The Umami Dashi Tsuyu is 4 times more concentrated and available in 1 liter. You will need to dilute the tsuyu before using it so actually, it can be used for 4 liters.

Ingredients: vegetable, fruit (tomato, dates, apple, etc), sugar (organic brown sugar, organic sugar), salt, vinegar, mushroom, soy sauce, coffee, sesame oil, spices, yeast extract, potato powder, sesame, yeast powder, fermented seasoning, kelp, shiitake, thickener (modified starch, xanthan).
