The Finest Vegan Course Menu by Japan’s Represent Italian Restaurant
FARO is an innovative Italian restaurant managed and operated by the symbol of Ginza for over 100 years, Shiseido, and awarded one star in the “Michelin Guide Tokyo 2021“. The restaurant’s name came from Italian with the meaning of “shining light” and is located on the 10th floor of the Shiseido Building in Ginza, Tokyo.
Shiseido established on 1872 in Ginza, Tokyo as Japan’s first Western-style dispensing pharmac. The founder, Mr. Arinobu Fukuhara, opened Japan’s first soda fountain in a corner of Shiseido Pharmacy in 1902 referring to the US drugstore he visited on the way back from Paris Expo in 1900. He sold soda water along with the manufacturing and selling of ice cream, which is extremely rare at that time, that became the specialty of Ginza. In 1928, he opened a restaurant serving authentic Western cuisines that became the pioneer of Western cuisines in Ginza. Then Shiseido proposed and aim for the realization of the new value “BEAUTY INNOVATIONS FOR A BETTER WORLD”. Italian restaurant “Faro Shiseido” opened in the current Tokyo Ginza Shiseido Building in 2001. Since it is reborn in October 2018, the restaurant has been at the forefront of Italian cuisine and has begun offering the vegan menu under the initiative of Chef Noda, who has also won Michelin in Italy. The restaurant offers a vegan menu using serving dishes and cutlery produced by traditional craftsmen that present the combination between tradition and innovation of contemporary Japanese cuisine with the wonderful food culture of Japan. The news is quickly spreading worldwide that attracts vegetarian and vegan customers from all over the world. Currently, the vegan menu has 30% of all orders.

We learned a lot about the vegetarian and vegan from the most basic since three years ago, in addition to listening to the needs directly from customers and opinion exchange among staffs we do every day in the kitchen. We offer a vegan menu that satisfies all customers (not only vegan customers) with carefully selected ingredients by cooperating with producers nationwide. We are constantly pursuing further possibilities and conducting research on a daily basis.
We faced various challenges at first, but then we began to see vegans as “new expressions” rather than “limitations”. By doing so, we were able to come up with various solutions. Now, the more difficult the problem, the more we are working on cooking every day with the pleasure of discovering new things. In the future, we would like to connect these efforts to food education for the next generation through the vegan menu.
