A Signature Tantanmen Recreated for Halal Diners
Tantanmen has long been one of Ganjin Shokudo’s signature dishes. Known for its rich sesame flavor, aromatic spices, and deep savory taste, the noodle dish has attracted diners from both inside and outside Kumamoto.
Rather than creating an entirely new recipe, the restaurant chose a more challenging approach: adapting its beloved signature dish while preserving the flavor that customers have come to expect. To achieve this, the chef carefully reviewed every ingredient and seasoning, including condiments that may contain alcohol, and rebuilt the recipe with halal considerations in mind.
After repeated testing and refinement, the result is a bowl that maintains the restaurant’s signature balance of creamy sesame richness, fragrant spices, and satisfying umami.

A Hearty Rice Bowl Featuring Japanese Halal Beef
Alongside the halal Tantanmen, Ganjin Shokudo has also introduced Beef & Chicken Rice, a filling dish made with both halal-certified beef and chicken. The beef is supplied by Zenkai Meat Company, a Kumamoto-based producer specializing in Japanese halal beef.
Using generous portions of locally produced halal beef allows diners to enjoy the natural flavor and richness of Japanese beef, while the addition of chicken creates a satisfying combination of textures and flavors.
The result is a comforting Japanese-style rice dish designed to be both hearty and approachable.
