Taste Kagoshima in Every Bite: Vegan Pasta with Sakurajima Daikon Now Available at Il Mole

Starting April 1, 2025, Resort Restaurant Il Mole, located in Amami no Sato in Kagoshima, has launched a brand-new vegan-friendly dish:
“Scent of Satsuma – Colorful Pasta with Sakurajima Daikon and Aonori Seaweed.”

This vibrant pasta dish contains no animal-derived ingredients and highlights the rich flavors of Kagoshima’s seasonal produce — perfect for health-conscious travelers, vegans, and Muslim customers seeking halal-friendly options in Japan.

Featuring Kagoshima’s Local Treasures

One of the key highlights is the use of Sakurajima Daikon, known as the world’s largest daikon radish (recognized by the Guinness World Records). This daikon is sweeter and more tender than ordinary radish. Il Mole uses it both as a cooked ingredient and as a fragrant freeze-dried topping to add depth and texture.

The dish is also beautifully accented with powdered Sakurajima komikan, the smallest orange in the world. This citrus powder gives the pasta a refreshing aroma and a delicate balance of sweetness and tang.

To bring in the taste of the sea, the pasta is generously topped with aonori seaweed, harvested from the pristine waters of Kagoshima. Its natural briny flavor brings a coastal breeze to every bite, harmonizing perfectly with the daikon.

Adding another layer of umami is “Koi Enoki” — a rich, flavorful mushroom grown in the mountains of Akune, Kagoshima. These mushrooms add earthy depth and make this vegan dish surprisingly satisfying without the use of any animal products.
