OkuKinosaki Seaside Hotel Launches “Tajima-Blessed Tanjo Kaiseki” Using Local Konotori Rice

If you’re visiting Kinosaki Onsen, consider going a little further north — to Oku-Kinosaki.

Starting December 2025, OkuKinosaki Seaside Hotel, located in the Tajima region of Hyogo Prefecture, has launched a new vegan-friendly accommodation plan: “Tajima-Blessed ‘Tanjo’ Kaiseki” (Dinner & Breakfast Included).
This special vegan kaiseki course highlights locally grown ingredients, including the environmentally friendly Konotori Hagukumu Rice, produced through sustainable farming practices that support biodiversity.

Designed with international travelers in mind, the course features familiar Japanese dishes such as sushi, oden, tempura, and onigiri — all prepared using 100% plant-based ingredients.

A Vegan Kaiseki That Celebrates “Beginnings”

The concept behind the “Tanjo (Birth)” Kaiseki is to celebrate moments of new beginnings — birthdays, anniversaries, and the start of a meaningful journey.

Seasonal Tajima vegetables take center stage, prepared with traditional Japanese techniques while focusing entirely on plant-based ingredients. The result is a deeply satisfying vegan dining experience that reflects both craftsmanship and care for nature.

Konotori Rice: Farming in Harmony with Nature

The main rice served in the kaiseki is Konotori Hagukumu Rice, cultivated primarily in Toyooka City, Hyogo Prefecture.

This rice is grown through environmentally conscious agriculture that minimizes pesticides and chemical fertilizers, creating rice paddies where wildlife can thrive. These efforts help sustain the habitat of the Oriental white stork (Konotori), which has successfully returned to the wild in this region.

Carefully nurtured in harmony with nature, the rice is known for its distinct sweetness, rich umami, and firm texture. It is served as freshly cooked clay-pot rice and handcrafted onigiri.。

Breakfast is also fully vegan and served in a Western-style one-plate format, featuring fresh Tajima vegetables.

Bread is sourced from Muginotabi, a local bakery based in Toyooka. Guests can choose between the hotel’s original “Shio-Kaze Blend” coffee or fresh juice. It’s a gentle, nourishing start to the day — perfect for travelers seeking balance and wellness.
